Most wouldWestland Whiskey 2 complain about the constant cloud cover and drizzling atmosphere hovering over Grays Harbor on any given day. But the weather conditions, similar to the Scotland Coast, were one local man’s best chance at developing a Single Malt Whiskey that stood out on the shelf. Emerson Lamb is a part of a five generation Hoquiam dynasty of business owners. But where his family’s property was once used to create heavy machinery, Emerson has built storage facilities for aging whiskey from his Seattle-based distillery, Westland Whiskey.

Using locally-grown barley from the Skagit Valley, the whisky is distilled in Seattle before being moved to Hoquiam where it ages for 27 months in American Oak barrels. Because of the cold, moist air that blows in from the Pacific Ocean, it significantly reduces the amount of evaporation in the barrels and draws out sugars from the oak.

Westland WhiskeyEmerson’s mission to develop a quality, North American based whisky was a success. Westland Whiskey produces 60,000 bottles of liquor a year and is the largest malt whiskey distillery by volume this side of the Mississippi. The 2015 ACSA Spirit’s Judging Awards gave Westland Whiskey’s single malt a gold medal label while the whiskey and distillery itself have won numerous other awards and recognition.
